Hi guys,

I'm new to the forum but have already read some fantastic advice on here.

Does anyone know where I can find a local supplier of hops or other homebrew supplies.
I know where to get the Coopers kits but that is all they stock. No hops, finings or anything else.

I know you can order online, but delivery is 6-8 days and often delivery is the same price (if not more) than the cost of the product I need.

Anyway, thanks again guys, Hope you can help.

I have been trying to build up a yeast bank for the past 2years. Been quite successful, but storage was a problem.

Slants on agar was just messy and to make a starter was time consuming. So tried something I found online... Freezing yeast.

Mixture of 50%yeast slurry, 25% water and 25% glycerine. The Glycerine acts as antifreeze and protect the yeast cells and the low temp means that the metabolic rate of the yeast is very low. And with a larger volume of yeast pitch once starter and then into fermentor.

Work fine in the beginning. Had starters bubbling happily from samples that spent 4months in the freezer. But last 2 failed to show fermentation. Have made starters from all my samples and after a week I can say with certainty that I lost all my yeast.

Any ideas as to why or another way of storage?

Hello all,

I haven't done an all-grain brew before and its difficult to get malted grain where I live so I am malting the barley myself.

I have seen video's on youtube and read a couple of webpages on how to do it.

I soaked my grain for 3 hours in water, drained it then let it sit for 8 hours.
I did that 3 times and the barley began to chit.
It has now been germinating for about 2.5 days but it has a strong smell, like a mix of yeast and vinegar but more vinegar.

I am germinating about 5kg of barley and have it in a big cooking pot.
Instead of trying to stir all of it, i have been transferring it between the pot and a bucket.
I have been transferring it every 4 to 6 hours and the temperature in the pot/bucket is about 22C.

Is there anything wrong with the barley?
Do you have any tips or idea's i should try?

All help will be greatly appreciated.
Regards,

It seems as if California Common or Steam Beer is not often brewed by home brewers in South Africa...

We've tried it three times so far.

A small beer using second runnings from a mash using Saflager yeast

A normal AG batch using Saflager yeast

A normal AG batch using Wyeast 2112 Californa Lager yeast

The first two were rather successful.
The second was disastrous:
(1) fermentation went wrong and the beer had a strange pineapple taste
(2) fermentation was delayed and the bottle pressures seem to be excessive [one bottle exploded in my hand this weekend]

My questions are:

Have you brewed or do you regularly brew Cali Common?

Are there any tricks with the fermentation? Do you use primary & secondary fermentation or simply primary and then bottle condition?

What yeast strain[/font] do you use?

This festival takes a lot to organise and a lot of things need to come together on the day to make it a success.
I'm thinking of copying the method Fullers in the UK uses, to get a greater variety of beer and not paying for it in extra brew time.

What I found online is that they use the 1st runnings from the mash with a high gravity as a seperate brew and hop it more bitter. The second runnings with a lower gravity is then hopped less bitter and more for aroma. Next they blend the 2 batches at different rations to get their London Pride, ESB and 2 others.

Have anyone tried it before? Or do anybody have any ideas on it?

Hi Guys,

Not too sure if anyone has seen the new website - http://www.beermag.co.za.
Anything that talks about the aqua vita - "beer" - is good in my mind!

Was at the brightwater commons craft beer fest this weekend and was very dissapointed. The event was not organised very well. Seems most brewers only got a few weeks notice and the rest of the stands were taken up by "beerchicken"??? SuperMalt??
