The oak barrel is full of lambic. I only need to wait 2 years. . .
This is my plumbing system with 3 pumps.
This shows an "exploded" view of a plumbing system that makes brew day a pleasure.
I threaded a 5mm screw into my pump inlet to make priming easier. (priming is the removal of air locks)
A malt mill powered by a washing machine motor. The rollers are the armatures of another 2 washing machine motors.
Nice clear first runnings

My grain mill, the Valley Mill, I imported it from Canada, you can search for it on the web.
50 litre mash tun with false bottom, a disc of polyethylene with zillions of 2.5 mm holes drilled in it.

Irish Moss is a sea weed extract and is used to make the protiens stick together at the end of teh boil so they don't end up in your fermentor. Here the Irish Moss is rehydrated 10 minutes before use in a cup of boiling water.
On a hot summer's day the wort is chilled en route to the fermentor through teh counter flow chiller (black thing) and the coil on the left which I immerse in a container of iced water. The iced water bath provides additional chilling after the cold tap water and allows me to pump the wort fast through the system and still come out with the wort at yeast pitching temperatures.
A blurry picture of my fermentor ! The lid screws on with an O-ring, the copper thermocouple pocket fits in half way up the side wall and the tap is fitted 3 cm from the bottom.
Wort transfer by gravity from a 25 litre bucket into the 70 litres fermentor inside a fridge. You can see the temperature probe entering the thermocouple pocket part the way up the fermentor's right side.
My fermenting & dispensing fridge, a lovely thing to find under your stairs at the end of a long day !

Fermentor, top view. Screw-on lid and simple seal. The fermentor blows off through this tube during fermentation and I plug it like this after the bubbles stop rising.
The copper (geyser) thermocouple pocket with the temperature probe going in. This allows me to measure the temperature of teh beer in teh middle of teh fermentor. This is not the same reading I woudl get measuring the fridge's air temperature !

The start of a wild brewers cellar. Saccharomyces lives happily with Brettanomyces, Pediococcus, Lactobacillus and a host of others from my terroir.

First 3 barrels filled! Left to right: Flanders style beer, Strong Ale, pLambic
Barrel Cleaning. Chains are used for scrubbing the inside - idea from Mike H.

The brewery has been built using copper geyser for all vessels. This set of photos shows some of the ideas that went into the building of the brewery and the results.

It was decided to keep the original geyser element and thermowell
All vessels are mounted on a moveable rig. The vessels sit on rings such as this
The HLT in position
Check if they fit: HLT top left, Mash Tun bottom left, Boiler bottom right. Note the size of the Mash Tun - shorter and squatter than the other two.
Insulating the HLT: wrap-around insulation joined using Velcro for easy removing if the need arises
The HLT in its almost-final form. The outer insulation provides both aesthetics and additional insulation
Mash tun cleaned. Note the welded seams to prevent opportunity for skulking nasties
Making the false bottom: started with the cut-off top of the geyser and drilled holes - lot of holes!
The false bottom with holes drilled. Small legs were then welded to raise the false bottom slightly from the floor of the mash tun
Insulating the Mash Tun with the first layer of insulation
The mash tun was fitted with a marine ply lid to contain heat inside the vessel. Here the sparge arm rests on the lid. Removalable end-caps on the sparge arm allow for easy cleaning or unblocking if the need arises
Compression fittings are used to lock the sparge arm in position. Note the split ferrules that allow the compression fitting to be hand tightened without compressing the ferrules. Works like a charm!
Looking into the mash tun. The sparge arm is adjustable to compensate for mash level
The Mash Tun in its final form. Outer insulation is both for looks and for providing an additional heat retention buffer
As the Boiler is heated using a gas burner, fibre glass insulation had to be used
The Boiler in its final form. Note the skirt welded to the bottom of the vessel to contain the heat from the gas burner. Sight-glass level indicator are used on all vessels - the sight-glass for the Boiler is seen at the front of the vessel in this photo
The Boiler stand is mounted on wheels for convenience. Ferro-cement sheets are used as insulation to contain the heat from the gas burner. The fouth riser is removable so that the boiler can be easily dismounted from the stand
The gas burner in place at the bottom of the Boiler
A recirculation pipe is welded inside the Boiler (the exit was later moved almost to the bottom of the vessel). Hot wort is pumped via the recirculation piping to create a whirlpool at end of boil
The original Hop Stopper before the stainless steel mesh had been applied
Hop Stopper Revision 1. This works much better as the hot break settles in the middle of the screen after whirlpooling, allowing cleaner wort to be collected from holes around the outer sides. Results in very little wort loss
Malt mill
Plan view of the Malt mill. The gearbox allows for a very high torque, making the the process of grinding the malt a pleasure
The on-off switch for the pump contains a neon lamp that is lit when the pump is running
A view of the pump housing: dishwasher pumps were used and mounted inside marine ply wooden boxes
The Fermenter sitting inside the Fermenter fridge. As can be seen, the chiller box of the fridge has been opened and flattened against the inside walls of the fridge. The temperature inside the fridge is controlled using a PID controller. Temperatiure can be maintained within 0,5 degree C from about +18 degrees C through to -10 degrees C
The fridge also provides an ideal environment for secondary fermentation and beer storage (if the beer stays around long enough to require storage)
The HLT temperature controller is a 4 - 20 mA PID controller driving an SCR-controlled power pack, that results in very close temperature control. The photo shown here was taken during the prototyping phase hence the crude mounting of the controller set
The brewery in its final form, packed and ready to roll! The counter-flow chiller packed below the pump set is copper-in-copper, and was quite a job to build
